Let’s make healthy eating FUN!

Elementary

Each day, students will try a fresh fruit or veggie in a different color:

📅 Color Schedule
🔴 Monday – Red
🟠 Tuesday – Orange
🟡 Wednesday – Yellow
🟢 Thursday – Green
🟣 Friday – Blue/Purple

👕 Wear a shirt that matches the color of the day!
🥗 Free lunches include the featured produce daily.
✅ Parent volunteers will tally up students who try a bite of the fresh produce!
🏆 The class with the most participation wins a treat!

Middle

Each day, students will try a fresh fruit or veggie in a different color and learn about the unique health benefits that come from eating colorful produce:

📅 Color Schedule
🔴 Monday – Red
🟠 Tuesday – Orange
🟡 Wednesday – Yellow
🟢 Thursday – Green
🟣 Friday – Blue/Purple

Students have the opportunity to taste soups created by the high school culinary class each day:

  • Monday: Roasted Amistad Soup (Roasted Tomato and Red Pepper with Parm)
  • Tuesday: Creamy Onraka Soup (Roasted Sweet Potato, Butternut Squash, & Carrot) 
  • Wednesday: Yummy Isibindi & Sollevare Soup (Split Pea & Roasted Corn)
  • Thursday: Reveur & Nukimori Salsa (Blue Fruit Salsa with Apple Chips)
  • Friday: Southwest Houses Soup (all colors)

Every student that tries the soup will earn a ticket for their House. The House that has the most participation will earn a bundle of points!

District

All students have the option of a free lunch that will have a fruit or veggie for the day included. Middle and High School students will have an additional tasting provided by High School Culinary Students. Be sure to ask them about what they tried and how they liked it!

At the end of the week, talk with them about incorporating colorful fruits & veggies on their plate every day. Here is a pledge you could make together:

·      Choose healthy snacks like fruits & veggies.
·      Learn where my food comes from — including our school greenhouse!
·      Encourage my friends and family to eat fruits & vegetables too.
·      Celebrate healthy habits with a big smile and a full belly!

To "eat the harvest" means to eat a variety of colorful fruits and vegetables — aiming to include a wide range of natural colors in your meals. It’s a simple and visual way to encourage nutritional diversity and balanced eatingHere’s how you can eat the harvest with colors, using typical late summer to early fall produce:


🌈 Eat the Harvest by Color:

🔴 Red – Ripe & Bold (heart health)

Foods: Tomatoes, red peppers, apples, beets, radishes
Nutrients: Lycopene, vitamin C, antioxidants
Meal Ideas:

  • Fresh tomato and basil salad (Caprese)

  • Roasted beet and apple salad

  • Grilled red pepper with olive oil and garlic


🟠 Orange – Sweet & Earthy (great for eyes and skin)

Foods: Carrots, sweet potatoes, pumpkins, orange peppers
Nutrients: Beta-carotene (vitamin A), fiber
Meal Ideas:

  • Roasted carrot and sweet potato soup

  • Pumpkin risotto or pumpkin muffins

  • Shredded carrot and orange slaw


🟡 Yellow – Bright & Sunny (energy booster)

Foods: Corn, yellow squash, yellow tomatoes, golden beets
Nutrients: Flavonoids, vitamin C
Meal Ideas:

  • Grilled corn on the cob with lime and chili

  • Sautéed yellow squash with herbs

  • Golden beet and goat cheese salad


🟢 Green – Fresh & Healing (packed with vitamins and minerals)

Foods: Kale, spinach, green beans, zucchini, cucumbers, herbs
Nutrients: Chlorophyll, folate, vitamin K
Meal Ideas:

  • Zucchini and herb frittata

  • Cucumber salad with dill and yogurt

  • Sautéed kale with garlic and lemon


🔵🟣 Blue/Purple – Rich & Deep (brain power)

Foods: Eggplant, purple cabbage, grapes, plums, blueberries
Nutrients: Anthocyanins (brain and heart health)
Meal Ideas:

  • Roasted eggplant with tahini

  • Purple cabbage slaw with apple cider vinegar

  • Grape and arugula salad with walnuts
